In this study, the microbiological changes in Pikeperch (Sander lucioperca) fillets that were stored frozen (-18°C) were investigated. The research lasted
7 months and Total Aerobic Mesophilic and Psychotrophic bacteria, Salmonella spp., Staphylococcus aurus, Escherichia coli and Coliform bacteria were
examined in the frozen fillets. At the first month of frozen storage, a slight decrease in the counts of Total Aerob Mesophilic Bacteria, Psychotrophic Bacteria,
E. coli and Coliform bacteria were observed but then the counts were in almost in steady stage. Salmonella and S. aureus were not found during frozen
storage.
