Farklı Balıkçı Tezgâhlarının Mikrobiyolojik Yönden İncelenmesi

In this study, samples were taken both evening and morning from stalls where the same fish were on display. Three kinds of fish stalls were used. One of these was made of marble (Group A) and others were made of stainless steel which one of them has two water outlet at lower corner (Group B) and another one has seperate water outlet at each plate (Group C). The changes of group’s total mesophile aerobic bacteria (TMAB), total mould and yeast (TM-Y), Coliform bacteria, Eshericia coli., Staphylacoccus aureus and also the relationships of these with kind of stall were examined. Considering the results of analysis committed in the morning E.coli and S. aureus were not determined at any stall. Coliform were not found at group A and C. Minimum TM-Y were found (p<0.05) at group C. While TMAB were not found at group C, it was found significantly lower (p<0.05) at group A than group B. S. aureus were not determined on any stall on samples taken in the evening. E.coli and Coliform were not found at group C, meanwhile, others were similar in terms of E.coli number (p>0.05). The amount of Coliform on group B was determined more intensive than group A (p<0.05). Group C was the best in terms of TM-Y and TMAB loads. Comparing the result of morning and evening; TMAB, Coliform and E. coli on group A significantly increased (p<0.05) in the evening. But the TM-Y load didn’t increase remarkably (p>0.05). The number of TM-Y, Coliform and E.coli on group B significantly increase (p<0.05) in the evening, the number of TMAB didn’t change. The number of TMAB and TM-Y on group C significantly increased (p<0.05) at the end of the day. According to the results of the study, group C was found more hygienic microbiologicaly than others.
